When the culinary team at The Salt Room approached us with a vision to elevate their tableside service menu, we knew this wasn't going to be a standard fabrication job. They needed something exceptional: a fully functional, one-of-a-kind bespoke culinary press engineered specifically for their head chef’s signature seafood presentation.
The result is a stunning, 400mm tall functional sculpture, a masterclass in 316-grade marine stainless steel, solid brass accents, and seamless mechanical movement that now serves as a moving centrepiece on the Brighton coast.

A Vision of Tableside Theatre
The brief from The Salt Room was clear yet incredibly demanding. They required a custom-built press to extract rich, concentrated juices for intense tableside sauces a nod to classic French culinary theatre, but re-imagined for an elite, modern seafood menu. This unit couldn't just look pretty; it needed to withstand immense mechanical pressure, undergo rigorous kitchen cleaning, and operate flawlessly under the high-pressure environment of a live service.
From the initial design collaboration down to the final polish, our team worked hand-in-hand with their head chef to ensure the ergonomics and mechanics matched the culinary intent. Every handle rotation, thread pitch, and transition phase was plotted to allow the service team to execute orders seamlessly while keeping the focus entirely on the guest experience.

Engineering for Elegance: The Technical Breakdown
When fabricating a piece destined for a high-end restaurant on the seafront, material selection is everything.
316 Marine-Grade Stainless Steel: To combat both the high-acid kitchen environment and the corrosive coastal air of Brighton, the entire core body was machined from heavy-duty 316 stainless steel.
Scotch Orbital Finish: We applied a meticulously hand-dressed Scotch orbital finish to the stainless steel body. This creates a soft, architectural satin look that diffuses ambient restaurant lighting beautifully while being incredibly resilient against fingerprints and heavy kitchen wear.
Solid Brass Accents: To contrast the industrial cool of the steel, the press features solid, hand-turned brass handles and a custom, brass-templated logo plaque proudly showcasing its connection to the venue. Over time, this brass will develop a rich, natural patina that tells the story of every service it has executed.
Standing perfectly at 400mm tall, the press functions as a striking piece of sculptural art on their custom timber service trolley before it ever turns a thread.

Form Follows Function: The Commercial Kitchen Reality
Beautiful design means nothing in commercial hospitality if it slows down service. A critical part of our design collaboration involved planning for the fast-paced reality of a packed dining room. To facilitate a quick transition between tableside orders, we didn't just supply the press alone. Our package included a full array of precision-engineered spare parts and extra custom saucepans.
This allows the kitchen team to seamlessly swap out the collecting pans and internal press plates between covers, ensuring immaculate hygiene and zero delays. The press can be stripped, cleaned, and re-staged in a matter of moments, keeping the tableside experience flowing smoothly from one table to the next.
