The Brief

The Salt Room approached SCMF to develop a bespoke culinary press for tableside seafood service at its Brighton seafront restaurant.

The press needed to extract concentrated juices for sauces while operating as part of the restaurant's tableside presentation. This meant the finished piece had to combine mechanical function, durability, ease of cleaning and a level of finish appropriate for a highly visible hospitality environment

Technical Development

SCMF worked with The Salt Room's head chef to develop the mechanics and ergonomics of the press around its intended use during live service.

Particular attention was given to the handle movement, threaded mechanism and transition between operations, while the overall proportions were developed to create a piece that could function effectively on the restaurant's custom service trolley.

The completed press stands approximately 400mm tall.

Fabrication

The core of the press was produced in 316 stainless steel, selected for its corrosion resistance and suitability for the demanding restaurant environment.

The stainless steel received a hand-applied Scotch orbital finish, producing a satin appearance while remaining practical for regular handling and cleaning.

Solid brass was used for the contrasting handles and branded plaque. The project also included spare internal press components and additional collecting saucepans, allowing parts to be exchanged between orders during service.

Finished Result

The completed press combines a functional piece of commercial kitchen equipment with a deliberately sculptural appearance.

Designed around The Salt Room's tableside service, it sits on a custom timber trolley before being brought directly to guests and used as part of the preparation and presentation of the restaurant's seafood dishes.
